Description
すなわち、本発明は以下の発明を包含する。
(1)クエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有する食肉及び魚介類の食味改善剤。
(2)クエン酸発酵物が糖質を含む食品又は植物を発酵してできる(1)に記載の食味改善剤。
(3)クエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有する食味改善剤を使用することを特徴とする食肉又は魚介類の食味改善方法。
(4)クエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有する食味改善剤を使用した食品。
以降の全実施例において、処理区とは食味改善剤を用いて調理を行った実験区である。
歩留り(%)=[調理後重量(g)/調理前重量(g)]×100
歩留りと官能検査の結果を表3に示す。
評価基準:−3、−2、−1、0、+1、+2、+3

Claims (4)
- 糖質を含む原料をクエン酸発酵させて得られるクエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有し、pH5.9〜9.0で使用する食肉及び魚介類の食味改善剤。
- pHが6.0〜7.1であることを特徴とする請求項1記載の食味改善剤。
- 糖質を含む原料をクエン酸発酵させて得られるクエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有する食味改善剤をpH5.9〜9.0で使用することを特徴とする食肉又は魚介類の食味改善方法。
- 糖質を含む原料をクエン酸発酵させて得られるクエン酸発酵物と果汁又は野菜汁のいずれか1以上を含有する食味改善剤をpH5.9〜9.0で使用した食品。
