−MCT油(58−61℃)を加温し、攪拌しながらゆっくりとセラ・アルバを組み込み、均質に混合する。
−混合物に、安息香酸を加え、(58−62℃で)攪拌することでウェルを均質化する。
−約20%のポリソルベート20量(約150g/kg)を加え、混合物が均質化するまで83−87℃に加熱しながら攪拌する。
−残りのポリソルベート20量をゆっくりと加え、ウェルを攪拌し、少なくとも5分間83−87℃の温度にする。
−40℃にできるだけ急速に温度を下げながら絶えず攪拌する。

Claims (25)
- 安定化剤を含まないソルビン酸および/または安息香酸などの脂肪酸および/または芳香族酸、ならびに可溶化物の総量に対して乳化剤が50重量%〜95重量%の濃度であって9〜18のHLB値を有する1種または複数の乳化剤を含有する、酸がミセル形態で存在し、ミセルが細胞膜との接触で開く場合にミセルから放出される酸が微生物に直接作用し、それらを除去する、保存剤の水不含可溶化物。
- 脂肪酸および/または芳香族酸が5重量%〜50重量%の濃度である、請求項1記載の可溶化物。
- 乳化剤が、ポリソルベートである、請求項1または2記載の可溶化物。
- 5重量%ソルビン酸および95重量%ポリソルベート20からなる前記請求項の1項記載の可溶化物。
- 20重量%安息香酸および80重量%ポリソルベート20からなる請求項1〜3の1項記載の可溶化物。
- 20重量%安息香酸、中鎖脂肪酸トリグリセリドを含有する5重量%の油脂、73.5重量%ポリソルベート20および1.5重量%のワックスからなる請求項1〜3の1項記載の可溶化物。
- ワックスが、ビーズワックスである、請求項6記載の可溶化物。
- ポリソルベート20が、ポリソルベート80で交換される、請求項6または7記載の可溶化物。
- 5重量%ソルビン酸、5重量%安息香酸および90重量%ポリソルベート20からなる請求項1〜3の1項記載の可溶化物。
- 9〜18のHLB値を有する乳化剤が、70℃〜90℃に加熱され、脂肪酸および/または芳香族酸が、攪拌しながら多量の冷却乳化剤ではなく温乳化剤と合され、完全に合した後、引き続き攪拌しながら、混合物が83℃〜90℃に加熱され、十分に均質化され、最終的に冷却される、請求項1〜9の1項記載の可溶化物の製造方法。
- 50重量%〜95重量%の乳化剤が加熱される、請求項10記載の製法。
- ポリソルベートが、乳化剤として用いられる、請求項10または11記載の製法。
- ポリソルベートが、72℃〜85℃に加熱される、請求項12記載の製法。
- 5重量%〜50重量%の脂肪酸および/または芳香族酸が、温乳化剤中に合される、請求項10〜13の1項記載の製法。
- 40℃に冷却される、請求項10〜14の1項記載の製法。
- 安息香酸が、加熱かつ均質化された湿潤剤に加えられ、混合物が均質化され、次いで、ポリソルベート量の5分の1が安息香酸/湿潤剤混合物に加えられ、得られた質量が攪拌され、加熱され、均質化され、最終的に残りのポリソルベート量が、ゆっくりと(すなわち、乳化剤を大きく(最大5℃)冷却することなく)加えられ、高温で攪拌される、請求項10〜15の1項記載の製法。
- 湿潤剤が、55℃〜65℃に加熱される、請求項16記載の製法。
- 高温が、80℃〜90℃の範囲で選択される、請求項16または17記載の製法。
- 中鎖脂肪酸トリグリセリドを含有する油脂およびワックスの混合物からなる湿潤剤が選択される、請求項15〜17の1項記載の製法。
- 界面活性剤が、5重量%の油脂および1重量%〜1.5重量%のワックスから合される、請求項19記載の製法。
- 4.0〜7.0の高pH値を有する食品に対する保存添加物としての請求項1〜9の1項記載の安定化剤を含まない可溶化物の使用。
- 食品の投与量が500ppm〜1000ppm/リットルである、請求項21記載の使用。
- ミルク、チーズおよびヨーグルトなどのミルク製品に対する保存添加物としての請求項1〜9の1項記載の安定化剤を含まない可溶化物の使用によって、可溶化物が、チーズ外皮に適用されるところの、使用。
- 野菜、果物およびハーブに対する保存添加物としての請求項1〜9の1項記載の安定化剤を含まない可溶化物の使用であって、可溶化物の水性溶液中に野菜または果物またはハーブを浸水させるところの、使用。
- 木材表面または家具などの他の人工物、あるいは可溶化物の希釈水性溶液での処理による医療器具および機器の防腐のための請求項1〜9の1項記載の安定化剤を含まない可溶化物の使用。
