Description
精麦割合が40%未満では、小麦粉の外皮の味と香りが茸抽出エキス末の旨みと香りを邪魔してしまうからであり、55%を超えると、外皮をたくさん削除するので製品としてのロスがたくさん出てしまいコスト高となり、一般的に入手が難しくなるからである。
また、薬膳うどんに含まれる複数種類の茸抽出エキス末と、めんつゆに含まれる乳茸や茶樹茸等の抽出エキス末との相乗作用によって、強烈な旨みと独特な匂いを感じることができる。
(1)タモギ茸:抗ストレス、抗そううつ等
(2)袋茸:強心作用等
(3)茶樹茸:膵臓病、水腫れ等
(4)舞茸:抗腫瘍作用等
(5)椎茸:血液浄化作用等
(6)霊芝:血液浄化作用等
(7)乳茸:健胃、血圧降下作用等
各茸抽出エキス末が少なすぎるとそれぞれの薬効を得ることが難しくなり、一方、多すぎると苦味が増して香りも味も壊してしまうからである。
上記乳茸および茶樹茸の2種類の茸から抽出されたエキス末を用いる場合には、乳茸および茶樹茸の混合割合(容積比:vol%)は、濃縮だししょうゆ100に対して、乳茸および茶樹茸の茸抽出エキス末が約3〜6のような範囲であることが好ましい。
乳茸または茶樹茸の茸抽出エキス末が少ないとその薬効を得ることが難しくなると共に、乳茸特有の香りや茶樹茸の旨みを適度に得ることができないからである。一方、多すぎると強烈な香りや旨みが苦味となるからである。
また、この実施形態では、茸抽出エキス末を構成する乳茸と茶樹茸の混合割合(容積比:vol%)は、80:20程度とすることが好ましい。
例えば、タモギ茸、乳茸、茶樹茸の3種類の茸抽出エキス末を溶かした茸抽出エキス含有水溶液をうどん麺用小麦粉に混合したり、タモギ茸、舞茸、椎茸、フクロ茸、霊芝、乳茸および茶樹茸の7種類の茸抽出エキス末を溶かした茸抽出エキス含有水溶液をうどん麺用小麦粉に混合することもできる。これらのいずれの茸抽出エキス末の組合せであっても、うどん麺用小麦粉と茸抽出エキス末との混合割合(容積比:vol%)は、うどん麺用小麦粉100に対して茸抽出エキス末が約1〜5であることが好ましい。
タモギ茸と茶樹茸は、どちらもアミノ酸が多いのと、茶樹茸にはグルタミン酸が他の茸の4倍もあるのでいっそう際立った旨みを得ることができる。また、乳茸に含まれるオレイン酸(胃酸の分泌を調節するという効果)とリノール酸(血圧を下げる効果)とにより、生活習慣病を予防できるという効果が期待できる。タモギ茸、舞茸、椎茸、フクロ茸、霊芝、乳茸および茶樹茸の7種類の茸抽出エキス末を混合すれば、旨みと薬効が数倍得られる効果となる。
図1は、本発明にかかる薬膳うどんセットを示す斜視図であり、符号1はうどん麺をパックした袋、2はめんつゆが封入されたつゆ入り袋、3は、うどん麺パック1とめんつゆ入り袋2を収納する化粧箱をそれぞれ示す。符号4は化粧箱に更に収納される薬味セットを示す。
しょうゆ以外の各種調味料としては、味噌、食塩、砂糖及びみりんなどがあげられる。

Claims (3)
- タモギ茸、舞茸、椎茸、フクロ茸、霊芝、乳茸および茶樹茸の7種類のうちから選ばれる少なくとも2種類以上の茸の茸抽出エキス末を水に溶かし、この茸抽出エキス溶液と地粉を精麦してなるうどん麺用小麦粉とを混合し、練り上げてうどん下地とした薬膳うどんと、乳茸および茶樹茸の2種類、あるいはその2種類にタモギ茸、舞茸、椎茸、フクロ茸および霊芝から選ばれる少なくとも1種類を加えてなる茸抽出エキス末を濃縮だししょうゆに混合してなるめんつゆとの組合せからなる薬膳うどんセット。
- 前記めんつゆは、乳茸および茶樹茸の2種類の茸抽出エキス末を濃縮だししょうゆに混合させたものであり、それらの混合割合(容積比:vol%)は、濃縮だししょうゆ100に対して、乳茸および茶樹茸の茸抽出エキス末が3〜6であることを特徴とする請求項1に記載の薬膳うどんセット。
- 前記茸抽出エキス末における乳茸と茶樹茸の混合割合(容積比:vol%)は、80:20であることを特徴とする請求項2に記載の薬膳うどんセット。
