Abstract
Description
酸性飲食物の調製:
パフィアエキス、ステビアおよび原料水を表1の基準処方に記載の量で混合して合計で100mlの酸性飲食物とした(pH4.7)。また、比較として基準処方のステビアに代えてスクラロースを用いた酸性飲食物(pH4.7)を調整した。これらの酸性飲食物について、被験者3名が飲用し、以下の評価基準によるマスキング評価と風味評価をし、更に自由描写で風味評価を行った。それらの結果をパフィアエキスの固形分を1とした場合のステビアの固形分の配合割合と共に表2に示した。
(判定) (内容)
◎:パフィアの雑味が十分にマスキングされている
○:パフィアの雑味がマスキングされている
△:パフィアの雑味があまりマスキングされていない
×:パフィアの雑味が全くマスキングされていない
(判定) (内容)
◎:パフィアの風味とステビアまたはスクラロースの風味のバランスがとても良い
○:パフィアの風味とステビアまたはスクラロースの風味のバランスが良い
△:パフィアの風味とステビアまたはスクラロースの風味のバランスがあまり良くない
×:パフィアの風味とステビアまたはスクラロースの風味のバランスが悪い
酸性飲食物の調製:
パフィアエキス、ステビア、果糖、コラーゲンペプチドおよび原料水を表3の基準処方に記載の量で混合した後、pHを無水クエン酸で3.7に調整して、合計で100mlの酸性飲食物とした。これを90℃の温度で1分間加熱殺菌してガラス製の容器に充填後に冷却し、5℃にて5日間保存した。また、比較として基準処方のステビアに代えてスクラロースを用いた酸性飲食物を調整した。これらの酸性飲食物の保存後のマスキング評価と風味評価を実施例1と同様の評価基準で評価した。それらの結果をパフィアエキスの固形分を1とした場合のステビアの固形分の配合割合と共に表4に示した。

Claims (6)
- パフィア加工物とステビアを含有することを特徴とする酸性飲食物。
- パフィア加工物が、パフィアエキスである請求項1記載の酸性飲食物。
- パフィア加工物由来の固形分を1とした場合に、ステビア由来の固形分が0.110〜0.200である請求項1または2に記載の酸性飲食物。
- 更に、甘味料を含有するものである請求項1〜3のいずれか1項に記載の酸性飲食物。
- 甘味料が、果糖である請求項4に記載の酸性飲食物。
- パフィア加工物を含有する酸性飲食物に、ステビアを配合することを特徴とする酸性飲食物におけるパフィア由来の雑味をマスキングする方法。
