ガス状ヘッドスペース内の揮発性コーヒーアロマ化合物類の相対量を、以下の方法によって測定した。:
0.6mLの液体コーヒー飲料を、2mLのクリンプキャップ付シリル化アンバーバイアルに2連で移し、分析前に25℃で1時間以上平衡化した。試料を、Gerstel MPS2オートサンプラーを使用して、ヘッドスペースモードで分析した。カルボキシン(Carboxen)、ジビニルベンゼン及びポリジメチルシロキサンでコーティングされた1cmのSPMEファイバー(Supelco)をヘッドスペースに挿入し、25℃で10分間平衡化させた。ファイバーを試料から取り出し、内径0.75mmのライナー(Supelco)を含有するガスクロマトグラフ(GC)(Agilent6890)の注入口に250℃で10分間入れた。脱着の最初の2分間はパージをオフにしておき、残りの8分間はパージをオンにしてファイバーをクリーニングした。GC分離及びSCANモードでの質量スペクトル検出(Agilent 5973MSD質量分光計(EIにおけるスキャンレンジ29〜300m/z))を、アロマ化合物類の相対的定量化に使用した。
2種類の液体コーヒー飲料を作製し、密閉容器内に充填した。両方の試料の組成を表1に示す。
試料A及び試料Bを、コーヒーアロマを添加していない標準試料と、官能パネルにより比較した。官能パネルにより試料Bは、最も標準試料と異なること、試料Aよりも、より多くの全体的なアロマ、より多くのコーヒーアロマ、及びより多くの硫黄質アロマ、並びにより多くのコーヒー風味、より多くの硫黄風味、及びより少ないミルク風味を伴うことが見出された。
Claims (11)
- 乳脂肪と、乳脂肪1gあたり少なくとも1gの量で、焙煎コーヒー豆に由来するコーヒーアロマ化合物類と、を含む、コーヒーアロマ組成物。
- 少なくとも0.5重量%の乳脂肪を含む、請求項1に記載のコーヒーアロマ組成物。
- 乳脂肪1gあたり少なくとも3gの量で、焙煎コーヒー豆に由来するコーヒーアロマ化合物類を含む、請求項1又は2のいずれか一項に記載のコーヒーアロマ組成物。
- ガラクトマンナン及びアラビノガラクタンの含有量が乾物1gあたり10mg未満である、請求項1〜3のいずれか一項に記載のコーヒーアロマ組成物。
- ミルクを含む、請求項1〜4のいずれか一項に記載のコーヒーアロマ組成物。
- コーヒーアロマ組成物の製造方法であって、
a)焙煎粉砕コーヒーからコーヒーアロマを水蒸気でストリッピングして、コーヒーアロマ含有水蒸気を生成するステップと、
b)アロマ化合物類を前記コーヒーアロマ含有水蒸気から回収するステップと、
c)ステップbで回収したアロマ化合物類を、乳脂肪を含む液体組成物へと添加し、コーヒーアロマ及び乳脂肪を含むコーヒーアロマ組成物を製造するステップと、を含む方法。 - ステップcにおいて、前記回収したアロマを、乳脂肪1gあたり少なくともコーヒーアロマ化合物類が1gの量で添加する請求項6に記載の方法。
- 本発明のコーヒーアロマ組成物の製造方法であって、
a)粉砕、蒸らし、及び抽出のステップでアロマガスを収集するステップと、
b)低温凝縮により、アロマ化合物類を回収してアロマフロストを形成するステップと、
c)ステップbで回収したアロマフロストを、乳脂肪を含む液体組成物へ添加し、コーヒーアロマ及び乳脂肪を含むコーヒーアロマ組成物を製造するステップと、を含む方法。 - ステップcの前記乳脂肪を含む液体組成物は、ミルクを含む、請求項6、7又は8のいずれか一項に記載の方法。
- 液体コーヒー飲料の製造方法であって、請求項1〜5のいずれか一項に記載のコーヒーアロマ組成物を、液体コーヒー抽出物へ添加するステップを含む方法。
- 請求項6〜9のいずれか一項に記載の方法により作製されたコーヒーアロマ組成物を液体コーヒー抽出物へと添加するステップを含む、液体コーヒー飲料の製造方法。
