Claims (13)

  1. (a)5,000ppm〜300,000ppmのステビオール配糖体と、
    (b)10,000ppm〜750,000ppmの食品グレードの非水性溶媒と、
    (c)25,000ppm〜575,000ppmの酸と、残部の水とからなる溶液を含む食品組成物であって、
    前記ステビオール配糖体は少なくとも95%がレバウジオサイドAであり、
    前記酸は、クエン酸、リンゴ酸、酒石酸、リン酸からなる群より選択され、そして、
    前記食品グレードの非水性溶媒は、エタノール、プロピレングリコール、1,3−プロパンジオールからなる群より選択される、
    食品組成物。
  2. (a)5,000ppm〜300,000ppmのステビオール配糖体と、
    (b)25,000ppm〜575,000ppmの酸と、残部の水とからなる溶液を含む食品組成物であって、
    前記ステビオール配糖体は少なくとも95%がレバウジオサイドAであり、
    前記酸は、クエン酸、リンゴ酸、酒石酸、リン酸からなる群より選択される、食品組成物。
  3. 前記ステビオール配糖体はステビオサイドと他のステビオール配糖体との混合物を含む、請求項1または2に記載の食品組成物。
  4. 前記他のステビオール配糖体は、レバウジオサイドA、レバウジオサイドB、レバウジオサイドC、レバウジオサイドD、およびズルコサイドAを含む、請求項に記載の食品組成物。
  5. 前記ステビオサイドは、ステビオサイド:他のステビオール配糖体のppm比として1:1〜1:1,500の範囲で存在する、請求項3に記載の食品組成物。
  6. 前記ステビオサイドは、ステビオサイド:他のステビオール配糖体のppm比として1:20〜1:500の範囲で存在する、請求項に記載の食品組成物。
  7. 前記ステビオサイドは、ステビオサイド:他のステビオール配糖体のppm比として1:20〜1:100の範囲で存在する、請求項に記載の食品組成物。
  8. 500ppm〜200,000ppmの両親媒性物質をさらに含む、請求項1または2に記載の食品組成物。
  9. 前記両親媒性物質は、乳酸、テルピネオール、ベンジルアルコール、1−ブタノール、1−プロパノール、プロピオン酸、カプリル酸、2−メトキシフェノール、酪酸、ヘキサン酸、イソブタノール、2−エチルピラジン、2−メチルチオール3メチルピラジン、ベンズアルデヒド、3−メチルペンタン酸、L−乳酸ブチル、吉草酸、2メルカプトプロピオン酸、4−アリル−2−メトキシフェノール、フェニル酢酸、フェネチルアルコール、2−メトキシ−4−[1−プロペン−1−イル]フェノール、9デセン酸、5,6デセン酸、1−オクタノール、1−デカノール、ヘキシルアルコール、およびこれらの組み合わせからなる群より選択される、請求項に記載の食品組成物。
  10. 前記ステビオール配糖体は、少なくとも1週間から33間にわたり溶液中に残存する、請求項1または2に記載の食品組成物。
  11. 前記組成物は液体濃縮物である、請求項1または2に記載の食品組成物。
  12. 前記液体濃縮物は、1部の濃縮物を5部〜180部の水に加えブリックス又はブリックス相当を2〜25とした範囲で再構成することができる、請求項11に記載の食品組成物。
  13. 1.8〜4.0のpHを有する、請求項1または2に記載の食品組成物。
