Abstract

본 발명은 신규한 α-글루코실 스테비오사이드 및 이의 제조 방법에 관한 것으로서, 보다 상세하게는 스테비오사이드의 19-OH 위치에 글루코스가 알파-글리코시드 결합에 의해 연결되어 부가된 α-글루코실 스테비오사이드, 상기 α-글루코실 스테비오사이드를 제조하는 방법, 수크로즈 및 글루칸수크라제 또는 이를 생산하는 미생물을 함유하는 스테비오사이드의 α-글루코실화 조성물, 상기 α-글루코실 스테비오사이드를 유효성분으로 함유하는 감미료 조성물, 상기 α-글루코실 스테비오사이드를 감미료로 함유하는 식품 조성물, 및 스테비오사이드 함유 식물 또는 식품에 글루칸수크라제 또는 이를 생산하는 미생물을 처리하는 단계를 포함하는 것이 특징인 스테비오사이드 함유 식물 또는 식품의 감미질 개선 방법에 관한 것이다. 따라서, 본 발명에 따른 글루칸수크라제를 사용하는 α-글루코실 스테비오사이드를 제조하는 방법을 이용하면 19-OH 위치에 글루코스가 하나만 부가된 신규한 α-글루코실 스테비오사이드를 95% 이상의 높은 수율로 제조가 가능하여 감미질이 향상되어 단맛을 내는 식품첨가제 및 이를 포함하는 식품 산업 등에 유용하게 사용될 수 있다.
