Abstract

La invención presenta una mezcla de oligosacáridos derivada de la leche de vaca que fácilmente se puede secar por pulverización que comprende (a) una población soluble de oligosacáridos, que es la misma que los oligosacáridos solubles que se encuentran en la leche de vaca y (b) galactooligosacáridos ß formados por la acción de galactosidasa ß en la lactosa y los oligosacáridos de la leche. La mezcla tiene un contenido total de monosacáridos de menos de 5% p/v y una proporción de lactosa:oligosacáridos de menos de 20. Se presenta un proceso para obtener una mezcla de este tipo, que incluye un paso de nanofiltración. Asimismo, se presentan composiciones nutricionales, en especial, fórmulas para lactantes, que comprenden dicha mezcla de oligosacáridos.
