Abstract

PÓ LÁCTEO COM LACTOSE REDUZIDA. A invenção se refere ao campo de composições lácteas secas ou em pó. A presente invenção descreve um método para produção de um pó lácteo com lactose reduzida compreendendo (i) tratar um substrato à base de leite compreendendo lactose com uma primeira enzima com atividade de transgalactosilase e uma segunda enzima com atividade de lactase para obter um produto à base de leite compreendendo galacto-oligossacarídeos (GOS) e com lactose reduzida (ii) preparar pó lácteo com lactose reduzida a partir do dito produto à base de leite compreendendo GOS e com lactose reduzida.
