Abstract
Composiciones de glucosil estevia se preparan a partir de glicósidos de esteviol de Stevia rebaudiana Bertoni. La glucosilación se realizó mediante ciclodextrina glucanotransferasa usando el almidón como fuentes de residuos de glucosa. Las composiciones de glucosil estevia se purificaron a >95% de contenido de glicósidos de esteviol totales. Las composiciones se pueden utilizar como aumentadores de dulzura, sabores, aumentadores de sabor y edulcorantes en alimentos, bebidas, cosméticos y sustancias farmacéuticas.
