Abstract
【解決手段】本発明には、食品に用いられる粒子状非ナッツ系マメ科植物性材料を熱処理する方法に関する。かかる方法は、粉砕又は製粉され且つ流動層乾燥機内の流体流れ内に懸濁された粒子状非ナッツ系マメ科植物性材料を、少なくとも3分間にわたって少なくとも130℃の高温にして、所望の風味特性を粒子状非ナッツ系マメ科植物性材料に発現させるステップを含む。

Description
本発明者らは、以下の条件を流動層乾燥機で試験した。以下の成分を有する外皮を除去したリョクトウを用いた。
たんぱく質含量 25%
炭水化物 57%
脂肪 1.1%
粗繊維 0.6%
灰分 3.5%
処理のためのリョクトウの開始時の水分を9%、13%及び17%に調整した。リョクトウの粒径は、85ミクロンよりも小さいものと、150ミクロンよりも小さいものと、250から450ミクロンのものであった。入口地点で測定した、流動層に送給される空気の温度は、160℃、190℃、210℃、220℃、230℃、240℃、250℃、260℃及び270℃であった。試験した処理時間は、3.5分から20分までであった。気流速度は、2.1から5m/秒であった。

温度 270℃
気流速度 3m/秒
時間 4.5分
リョクトウ粉の最終水分 3%よりも小さい。
スプレッドの場合の成分として用いるためには、この材料は、熱処理後に再粉砕され、50ミクロンまで粉砕されることに留意されたい。
Claims (13)
- 食品に用いられる粒子状非ナッツ系マメ科植物性材料を熱処理する方法であって、粉砕又は製粉され且つ流動層乾燥機内の流体流れ内に懸濁された粒子状非ナッツ系マメ科植物性材料を少なくとも3分間にわたって少なくとも130℃の高温にして、所望の風味特性を前記粒子状非ナッツ系植物性材料に発現させるステップを含み、それにより、前記粒子状植物性材料を熱処理する、方法。
- 前記粒子状非ナッツ系マメ科植物性材料が、1000μm未満の平均粒径を有する、請求項1に記載の方法。
- 前記マメ科植物が、豆(bean)、メスキート(mesquite)、ソラマメ(broad bean)、エンドウマメ(pea)、ルピナス(lupin)及びレンズマメ(lentil)からなる群から選択される、請求項1に記載の方法。
- 前記豆が、小豆(adzuki bean)、アナサジ(anasazi)、ライマメ(lima bean)、ササゲ(cow pea)、ツルアズキ(rice bean)、ウーラット豆(urad bean)、モスビーン(moth bean)、テパリービーン(tepary bean)、ベニバナインゲン(runner bean)、フジマメ(hyacinth bean)、黒豆(black bean)、ソラマメ(fava bean)、ソラマメ(faba bean)、インゲンマメ(kidney bean)及びリョクトウ(mungbean)からなる群から選択される、請求項3に記載の方法。
- 前記豆が、リョクトウである、請求項4に記載の方法。
- 前記粒子状非ナッツ系植物性材料が、外皮が除去されたものである、請求項1〜5のいずれか1項に記載の方法。
- 前記高温が、130℃と400℃の間にある、請求項1〜6のいずれか1項に記載の方法。
- 前記高温が、140℃と370℃の間にある、請求項1〜7のいずれか1項に記載の方法。
- 前記高温が、190℃と350℃の間にある、請求項1〜8のいずれか1項に記載の方法。
- 前記高温が、250℃と300℃の間にある、請求項1〜9のいずれか1項に記載の方法。
- 前記高温が、270℃である、請求項1〜10のいずれか1項に記載の方法。
- 前記熱処理した粒子状植物性材料が、前記食品にロースト風味又はナッツ風味を与える、請求項1〜11のいずれか1項に記載の方法。
- 食品を製造するのに使用される、請求項1に記載の方法。
