Description
本発明者らは、以下の条件を流動層乾燥機で試験した。以下の成分を有する外皮を除去したリョクトウを用いた。

炭水化物 57%
脂肪 1.1%
粗繊維 0.6%
灰分 3.5%
処理のためのリョクトウの開始時の水分を9%、13%及び17%に調整した。リョクトウの粒径は、85ミクロンよりも小さいものと、150ミクロンよりも小さいものと、250から450ミクロンのものであった。入口地点で測定した、流動層に送給される空気の温度は、160℃、190℃、210℃、220℃、230℃、240℃、250℃、260℃及び270℃であった。試験した処理時間は、3.5分から20分までであった。気流速度は、2.1から5m/秒であった。

リョクトウ粉の最終水分 3%よりも小さい。

- 食品に用いられる粒子状非ナッツ系マメ科植物性材料を熱処理する方法であって、粉砕又は製粉され且つ流動層乾燥機内の流体流れ内に懸濁された粒子状非ナッツ系マメ科植物性材料を4〜10分間にわたって180〜300℃の高温にして、所望のナッツ風味特性を前記粒子状非ナッツ系マメ科植物性材料に発現させるステップを含み、それにより、前記粒子状非ナッツ系マメ科植物性材料を熱処理し、
