Abstract
Description
本出願は、全て2011年9月12日に出願された米国特許出願第13/199,910号の一部継続である、2011年12月29日に出願された係属中の米国特許出願第13/374,441号、2011年12月27日に出願された係属中の米国特許出願第13/374,417号、2011年12月27日に出願された係属中の米国特許出願第13/374,422号、2011年12月27日に出願された係属中の米国特許出願第13/374,421号および2011年12月27日に出願された係属中の米国特許出願第13/374,423号の一部継続である。
本発明は、食品を伸長させ、食品の線維を整列するために、食品および食品の圧力の低減を加速するための装置および方法に関する。
今現在ある成形技術は、高い圧力、速度および複雑な材料流路に依存し、それらにより品質を欠いた製品が製造される。高い圧力は肉の細胞に作用し、圧力が高くなるほど肉細胞の揉み、絞り、および乱流が発生する。複雑な流路と組み合わされた高い速度は、圧力および乱流を増大し、肉製品に作用し、細胞からミオシン/アクチンを分離かつ混合し、筋線維を相互に結合させ、収縮させる(タンパク質結合)。収縮は調理の際に高熱を適用する間に生じる。肉線維の活動は長さを収縮し、タンパク質結合と組み合わされたこの収縮により、制御されない場合奇妙な料理形状の原因になる筋線維が短くなるばかりでなく、噛むのに大変なゴム状の質感が生じる。
線維配向技術がミオシンのアクチンとの分離および混合を低減することが本発明の目的である。線維配向技術が繊維の配向を制御することが本発明の目的である。線維配向技術がより少ないミオシン活動性を実現し、それによってより良い噛み心地/結合および最終料理形状に制御をもたらすことが本発明の目的である。
図1は、直径102傾斜移行部104、スロート長さ106および放出部108を含む先行技術のベンチュリ100を示す。
・球形部の全ての地点は固定点から同じ距離である。
・球形部の外形および面部分は円形である。
・球形部は同じ幅および周囲寸法を有する。
・球形部は最少表面積を有する最大容積を有する。
・これら特性により食肉は最少の中断で流れることができる。静止領域および不動領域はない。
・円筒部分が球形部と何度で交差しようが、断面は常に完全な円である。
・球形部の内側の圧力は、全ての方向で均一である。
Claims (18)
- 挽かれる材料が投入されるホッパと、
挽きヘッド部、取付けリング、ブリッジ、バレルおよび収集管を含む挽き部分と、
前記ホッパ中の材料を前記ヘッド部を通して前進させるべく前記挽きヘッド部に配置された供給スクリューまたはオーガと、
前記供給スクリューの端部に取り付けられたナイフ組立体であって、前記供給スクリューおよびオリフィスプレートとともに回転するナイフ組立体と、
前記オリフィスプレートの下流に配置された収集錐体と、
を含み、
前記オリフィスプレートが複数の挽き開口と少なくとも1つの収集通路とから構成され、
前記挽き開口によりベンチュリ効果が生じる、
挽き機。 - 前記挽き機が、挽かれる線維材料を整列する、請求項1に記載の挽き機。
- 前記挽かれる材料が、前記材料を伸長する前記オリフィスプレートの前記開口を通して引かれる、請求項1に記載の挽き機。
- 前記開口によって生じる前記ベンチュリ効果により、前記オリフィスプレートを通して挽かれる前記材料の線維が整列される、請求項1に記載の挽き機。
- 前記挽かれる材料が伸長または整列され、前記材料のきれいな切断を作り出す、請求項1に記載の挽き機。
- 前記挽かれた材料が、アクチンおよびミオシンの分離をほとんどまたは全く有さない、請求項1に記載の挽き機。
- 前記開口が前記挽かれた材料の最小断面を作り出す、請求項1に記載の挽き機。
- 前記開口が、使用される液体ガスまたは固体のチョーク流以下でありかつ接続された円筒部分の直径以上である直径を有する、請求項1に記載の挽き機。
- 前記開口が、前記オリフィスプレートの球形部の直径対前記オリフィスプレートの円筒領域の直径の比率が約1.1〜2.5であるように直径を有する、請求項1に記載の挽き機。
- 前記ベンチュリオリフィスを表す断面を形成するために、前記オリフィスプレートの前記開口が、球形部の円筒部との交差を利用する、請求項1に記載の挽き機。
- 多数の挽き開口を含む挽き機のオリフィスプレートであって、前記挽き開口が円筒部と交差する球形部を含み、前記球形部の直径および前記円筒部の直径の比率は、成形可能な食品が前記オリフィスプレートを通過するときに前記成形可能な食品にチョーク流効果を引き起こす比率である、オリフィスプレート。
- 前記挽かれる食品が食肉を含む、請求項1に記載の挽き機。
- 前記オリフィスプレートの前記開口が、鋭い縁部を有する垂直または凹側で、より大きい直径からより小さい直径へ寸法を変える、請求項1に記載の挽き機。
- 前記開口を通して対応する圧力低下を有する製品加速をもたらすノズル、ベンチュリ、オリフィス、または流れ制限部を含む、請求項1に記載のオリフィスプレート。
- 円筒部に接続された球形部を有する少なくとも1つの開口であって、前記球形部が前記円筒部より大きい直径を有する、少なくとも1つの開口を含む、
骨収集器。 - 前記球形部対前記円筒部の直径の前記差により、前記球形部から前記円筒部に流れる肉の加速が増大される、請求項15に記載の骨収集器。
