Abstract
Description
1)液状噴射が可能な食品製造用ミキサーで甘味素材粉末を混合する段階と、
2)前記混合された粉末に食物繊維を噴射しながら混合してコーティングする段階と、
3)前記コーティングされた甘味素材粉末混合組成物を乾燥機で乾燥させる段階と、を含む方法により行われることができる。
固化防止された甘味素材組成物(砂糖及びキシロースを含む)の製造
市販の粒子の細かい砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約220μm)を入手して、前記砂糖890gとキシロース95gとをミキサーに入れて均一に混合した。次に、前記混合粉末に液状の難消化性マルトデキストリン(65 brix)15gを噴射しながら混合して均一にコーティングした後、乾燥機に移送し、前記混合された甘味素材組成物の総重量を基準として水分含量が0.2重量%以下となるように、熱風乾燥方式で乾燥する工程を経ることで、固化防止処理された砂糖及びキシロースが含まれた甘味素材組成物1kgを製造した。
砂糖及びキシロースを単純混合した甘味素材組成物の製造
市販の細かい砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約220μm)を入手して、前記砂糖900gとキシロース(平均粒径:約260μm)100gとをミキサーに入れて均一に混合した。前記実施例1のような、液状の難消化性マルトデキストリン等の食物繊維で粒子をコーティングする段階を経ずに、砂糖とキシロースとを単純混合した甘味素材組成物を製造した。
粒度測定器を用いた各甘味素材組成物の粒径の比較分析
実施例1及び比較実施例1により製造された甘味素材組成物と、市販の一般砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約455μm)及び市販の細かい砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約220μm)を入手して、四つの甘味素材組成物のそれぞれの粒径を、粒度測定器である「粒度標準網ふるい(CHUNG GEY INDUSTRIAL MFG.CO.製)」を用いて比較分析した。
粒径による甘味素材組成物の固化現象の比較分析
実施例1及び比較実施例1により製造された甘味素材組成物と、市販の一般砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約455μm)及び市販の細かい砂糖(シージェイチェイルジェダンコーポレイション製、平均粒径:約220μm)を入手して、それぞれ異なる粒径を有する四つの甘味素材組成物で発生する固化現象の程度を比較するための実験を行った。
好ましい組成比による固化防止された甘味素材組成物(砂糖及びキシロースを含む)の製造
砂糖とキシロースとを混合するにあたり、甘味素材組成物の官能に影響を与えず、且つ砂糖の体内への吸収が効果的に抑制されるようにするための好ましい配合比として、下記表3のように、砂糖に対するキシロースの重量比を約10:1として準備した(細かい砂糖として、シージェイチェイルジェダンコーポレイション製、平均粒径:約220μmのものを用い、キシロースとして、平均粒径:約260μmのものを用いる)。
Claims (6)
- 甘味素材に食物繊維を添加して混合することにより、甘味素材粒子を食物繊維でコーティングする段階を含む、固化防止された甘味素材組成物の製造方法。
- 前記食物繊維は、難消化性マルトデキストリン(Indigestable Maltodextrin)である、請求項1に記載の固化防止された甘味素材組成物の製造方法。
- 請求項1または2の方法により製造された、固化防止された甘味素材組成物。
- 前記組成物は、前記組成物の総重量を基準として、甘味素材95〜99.9重量%と、食物繊維0.1〜5.0重量%と、を含む、請求項3に記載の固化防止された甘味素材組成物。
- 前記甘味素材は、砂糖とキシロース(Xylose)との混合物である、請求項4に記載の固化防止された甘味素材組成物。
- 前記砂糖とキシロースは、キシロースが砂糖に対して1:0.05〜1:0.5の重量比で混合されている、請求項5に記載の固化防止された甘味素材組成物。
