Abstract
Description

本件は飲料の加工および配合に関する。
多くの飲料(炭酸入りソフトドリンク、炭酸なしフルーツドリンク、スポーツドリンク、およびジュースが挙げられる)では香味油を入れて飲料に香味を添え、そしてある場合には外観上の特性を飲料に与える。典型的には、飲料は、より大量の水性画分を、香味油を含有するエマルション濃縮物と組合せることによって形成する。香味油に加え、エマルション濃縮物は通常、水、保存料、酸味料、増量剤および安定剤(ハイドロコロイド)を含有してエマルションを経時的に均一に維持する。安定剤は、エマルションおよび希釈後の最終飲料の両者で分離を防止することが極めて重要である。しかし、全ての安定剤が等しく良好に働くわけではない。安定剤はエマルションの低pH条件および飲料の比較的より高いpH条件の両者で有効でなければならないからである。更に、安定剤は摂取に対して安全でなければならない。
一態様において、本発明は、少なくとも1種の香味油、および安定エマルションを生成するのに十分な量で存在する、水溶性セルロースエーテル;を含む、香味油エマルションを提供する。
一態様において、本発明は、少なくとも1種の香味油、および安定エマルションを生成するのに十分な量で存在する、水溶性セルロースエーテル;を含む、香味油エマルションを提供する。「安定エマルション」は、エマルションが分離しない(すなわち水が下部にたまって観察される可能性がないか、または油が上部を形成しない)ものである。全ての水溶性セルロースエステルが安定エマルションを形成するわけではなく、形成しないものは特許請求の範囲によって網羅されることを意図しない。一態様において、エマルションは少なくとも30日間、好ましくは少なくとも60日間、より好ましくは少なくとも90日間、最も好ましくは少なくとも120日間、安定な状態を保つ。
以下の例は例示の目的のみであり、本発明の範囲の限定を意図しない。参考のため、水溶性セルロースエーテルは、およそ表1に示すブルックフィールド粘度を、水中2%溶液について25℃にて示す。
例示の本発明に係る香味油エマルションは表1Aおよび1Bに列挙する成分を含有する。
例示の本発明に係る香味油エマルションは表2Aおよび2Bに列挙する成分を含有する。
比較組成物は表3に列挙する成分を含有する。
例1および3で上記した手順に実質的に従って形成したエマルションを形成した。これを表4に列挙する。
例2および3で上記した手順に実質的に従って形成したエマルションを形成した。これを表5に列挙する。
本発明および比較例に係る飲料は、表6に列挙する成分を含有する。
本発明および比較例に係る飲料は、表7に列挙する成分を含有する。
例6において上記した手順に実質的に従って形成した飲料を形成した。これを表8に列挙する。

Claims (18)
- 少なくとも1種の香味油;および
安定エマルションを生成するのに十分な量で存在する、水溶性セルロースエーテル;
を含む、香味油エマルション。 - 香味油が:シトラス油;コーヒー油;コーラ油;スペアミント、ウィンターグリーン、およびペパーミントを包含するミント油;ならびにバニラ、アーモンド、シナモン、クローブ、および月桂樹を包含するスパイス油;またはこれらのブレンド物からなる群から選択される、請求項1に記載の香味油エマルション。
- 香味油が、エマルション形成性組成物の約1質量%〜約30質量%の量、好ましくは約5質量%〜約15質量%の量、より好ましくは約11質量%〜約13質量%の量で存在する、請求項1に記載の香味油エマルション。
- エマルションが、少なくとも30日間、好ましくは少なくとも60日間、より好ましくは少なくとも90日間、最も好ましくは少なくとも120日間、安定した状態を保つ、請求項1に記載の香味油エマルション。
- エマルションが受ける少なくとも120日間に亘っての粘度低下が、5%未満、好ましくは2%未満、より好ましくは1%未満である、請求項1に記載の香味油エマルション。
- 水溶性セルロースエーテルが、メチルセルロースまたはヒドロキシプロピルメチルセルロースの少なくとも1種である、請求項1に記載の香味油エマルション。
- 水溶性セルロースエーテルが、25℃での水中2%溶液についてのブルックフィールド粘度が約4000cps未満、好ましくは約1000cps未満、好ましくは約150cps未満、好ましくは約100cps未満、より好ましくは約25cps未満を有するものから選択される、請求項6に記載の香味油エマルション。
- 水溶性セルロースエーテルが、MS約15〜約25およびDS約5〜約15を有するヒドロキシプロピルメチルセルロースである、請求項6に記載の香味油エマルション。
- 水溶性セルロースエーテルが、エマルション形成性組成物の約0.1質量%〜約15質量%の量、好ましくは約0.5質量%〜約10質量%の量、より好ましくは約1質量%〜約7質量%の量で存在する、請求項1に記載の香味油エマルション。
- 水、保存料、酸味料、または増量剤の少なくとも1種を更に含む、請求項1に記載の香味油エマルション。
- 増量剤が、臭素化植物油、エステルガム、スクロースジアセテートヘキサイソブチレート、精製ダンマルゴム、ガヌアバワックス、ベンジルベンゾエート、ポリグリセリルエステル、またはグリセリルトリベンゾエートの少なくとも1種である、請求項10に記載の香味油エマルション。
- 香味油エマルションが、約10%未満、好ましくは約7%未満、好ましくは約5%未満、好ましくは約3%未満、好ましくは約1%未満、より好ましくは約0.1%未満、最も好ましくは0.0001%未満のアラビアガムを含有することを条件とする、請求項1に記載の香味油エマルション。
- 請求項1に記載の香味油エマルションから製造される飲料であって、飲料加工温度が水溶性セルロースエーテルの熱ゲル化温度よりも低いことを条件とする、飲料。
- 室温で加工されている、請求項13に記載の飲料。
- 炭酸入り飲料である、請求項13に記載の飲料。
- 炭酸入り飲料ではない、請求項13に記載の飲料。
- シトラス風味飲料である、請求項13に記載の飲料。
- 少なくとも200日間安定した状態を保つ、請求項13に記載の飲料。
