Description
Claims (10)
- エマルジョンを含む飲料濃縮物であって、
前記飲料濃縮物は、
約0.01%〜約10%のキラヤ、
約15%〜約70%の非水性溶媒、および
約2%〜約60%の酸味料、
約0.1%〜約20%の脂質、
約0%〜約10%の緩衝剤、および
約1%〜約70%の水を含み、
前記非水性溶媒は、プロピレングリコール、グリセロール、エタノール、トリアセチン、酢酸エチル、ベンジルアルコール、植物油、1,3−プロパンジオール、およびそれらの組み合わせからなる群から選択され、
前記酸味料は、クエン酸、リンゴ酸、コハク酸、酢酸、アジピン酸、酒石酸、フマル酸、リン酸、乳酸、それらの塩、およびそれらの組み合わせからなる群から選択され、
前記脂質は、ヒマシ油、テルペン炭化水素、香料油(以下の誘導体の1つ以上からなる;ケトン、アルデヒド、ラクトン、エーテル、エステル、硫黄化合物、フラノン、テルペノイド)、油溶性ビタミン、脂肪酸、ポリ不飽和脂肪酸、トリグリセリドおよびトリグリセリド誘導体、植物油、ならびにそれらの組み合わせからなる群から選択され、
前記飲料濃縮物中の非水性溶媒に対する水の比が6:1〜1:6であり、前記飲料濃縮物中の酸味料に対する水の比が60:1〜1:10であり、
前記飲料濃縮物は、pHが約2.0〜約2.6であり、
前記エマルジョンは水中油型エマルジョンであり、
前記飲料濃縮物は、約20℃〜約25℃の貯蔵温度で貯蔵安定性であることを特徴とする飲料濃縮物。 - 約0.05%〜約5%のキラヤを含む、請求項1に記載の飲料濃縮物。
- 前記緩衝剤は、クエン酸、リンゴ酸、コハク酸、酢酸、アジピン酸、酒石酸、フマル酸、リン酸、乳酸、または炭酸、およびそれらの組み合わせのナトリウム塩、カルシウム塩またはカリウム塩からなる群から選択される、請求項1に記載の飲料濃縮物。
- 前記エマルジョンを含む飲料濃縮物は、30%以下の量の水を含む、請求項1に記載の飲料濃縮物。
- 前記エマルジョンを含む飲料濃縮物は、比重調整剤を含まない、請求項1に記載の飲料濃縮物。
- 水中油型エマルジョンを含む飲料濃縮物を製造する方法であって、前記方法は、
約15%〜約70%の非水性溶媒および約2%〜約60%の酸味料を含む溶液を提供し、
前記非水性溶媒は、プロピレングリコール、グリセロール、エタノール、トリアセチン、酢酸エチル、ベンジルアルコール、植物油、1,3−プロパンジオール、およびそれらの組み合わせからなる群から選択され、
前記酸味料は、クエン酸、リンゴ酸、コハク酸、酢酸、アジピン酸、酒石酸、フマル酸、リン酸、乳酸、それらの塩、およびそれらの組み合わせからなる群から選択され、
キラヤ、脂質および水を混合して、約0.01%〜約20%のキラヤ、約0.01%〜約60%の脂質、約0%〜約10%の緩衝剤、および約1%〜約99%の水を含む前記水中油型エマルジョンの形態の混合物を形成し、
前記脂質は、ヒマシ油、テルペン炭化水素、香料油(以下の誘導体の1つ以上からなる;ケトン、アルデヒド、ラクトン、エーテル、エステル、硫黄化合物、フラノン、テルペノイド)、油溶性ビタミン、栄養補助食品、脂肪酸、ポリ不飽和脂肪酸、トリグリセリドおよびトリグリセリド誘導体、酸化防止剤、着色料、植物油、ならびにそれらの組み合わせからなる群から選択され、
総重量に対して0.1%〜約35%の量で前記混合物を前記溶液に添加して、pHが約2.0〜約2.6であり、前記水中油型エマルジョンを含む前記飲料濃縮物を形成し、前記飲料濃縮物中の非水性溶媒に対する水の比を6:1〜1:6とし、前記飲料濃縮物中の酸味料に対する水の比を60:1〜1:10とすることを含むことを特徴とする方法。 - 前記飲料濃縮物は、約0.01%〜約8%のキラヤを含む、請求項6に記載の方法。
- 前記緩衝剤は、クエン酸、リンゴ酸、コハク酸、酢酸、アジピン酸、酒石酸、フマル酸、リン酸、乳酸、または炭酸、およびそれらの組み合わせのナトリウム塩、カルシウム塩またはカリウム塩からなる群から選択される、請求項6に記載の方法。
- 前記混合物を前記溶液に添加して、30%以下の量の水を含む前記飲料濃縮物を提供することをさらに含む、請求項6に記載の方法。
- 前記混合物の前記溶液への添加は、前記飲料濃縮物中に比重調整剤を提供することを含まない、請求項6に記載の方法。
