Abstract
【解決手段】(a)室温で液体の油溶性物質と(b)グリセリン不飽和脂肪酸エステル及び/又はポリグリセリン不飽和脂肪酸エステルと(c)グリセリンジアセチル酒石酸脂肪酸エステルと(d)グリセリンベヘン酸エステル及び/又はポリグリセリンベヘン酸エステルとを含有することを特徴とする豆腐用消泡剤組成物。

Description
本発明の豆腐用消泡剤組成物を水に分散して水分散液を調製し、該水分散液を、カット豆腐の製造において凝固剤を添加混合した豆乳を型枠に流し込む際又は充填豆腐の製造において凝固剤を添加混合した豆乳を小型容器に充填する際に発生した気泡に対して噴霧して使用すると、従来のシリコーン樹脂を配合した消泡剤の使用と同等の消泡効果が得られる。
ここでエステル化率は次のように定義される。
エステル化率 = エステル価※ ÷(エステル価 + 水酸基価)×100
※エステル価 = けん化価 − 酸価
ここでエステル化率は次のように定義される。
エステル化率 = エステル価※ ÷(エステル価 + 水酸基価)×100
※エステル価 = けん化価 − 酸価
(1)豆腐用消泡剤組成物作製のための原材料
1)カプリル酸ジグリセリド(商品名:サンファットGDC-S;太陽化学社製)
2)グリセリン不飽和脂肪酸エステル(商品名:ポエムOL-200V;理研ビタミン社製)
3)ジグリセリン不飽和脂肪酸エステル(商品名:ポエムDO-100V;モノエステル体含量約80質量%;理研ビタミン社製)
4)グリセリンジアセチル酒石酸脂肪酸エステル(商品名:Panodan AB 100;Danisco社製)
5)グリセリンベヘン酸エステル(商品名:ポエムB-200;エステル化率45%;理研ビタミン社製)
6)トリグリセリンベヘン酸エステル(商品名:ポエムTR-FB;エステル化率84%;理研ビタミン社製)
上記原材料を用いて作製した豆腐用消泡剤組成物(組成物1〜9)の配合組成を表1に示す。この内、組成物1〜5は本発明に係る実施例であり、組成物6〜9はそれらに対する比較例である。
表1に示した配合組成に基づいて豆腐用消泡剤組成物を作製した。即ち、原材料の全てを500mlトールビーカーに仕込み、スパチュラで攪拌しながら80℃のオイルバス中で加熱・溶融した。次に、トールビーカーを氷冷水に移し、その内容物をスパチュラで攪拌しながら20℃まで冷却することで豆腐用消泡剤組成物300g(組成物1〜9)を得た。
豆腐用消泡剤組成物(組成物1〜9のうちいずれか)40g及び水道水360gを容積500mlのハンドタイプの霧吹き器に入れ、該霧吹き器を素早く上下に10回振とうし、豆腐用消泡剤組成物の水希釈液を調製した。
次に、添加物無添加の市販の豆乳(商品名;北の大豆豆乳;太子食品工業社製)100mlを30cmの高さから直径15cmの容器へ1秒以内に注ぎ込むことにより、該容器内の豆乳の表面に泡を生成させた。この泡に対し、上記のように調製した水希釈液を30cmの高さから霧吹き器にて1回スプレーした直後の豆乳表面の様子を目で見て観察することにより消泡性能を評価した。また、対照として、シリコーン樹脂を含有する市販の消泡剤(市販品A;商品名:KM−72F;信越シリコーン社製)についても同様に評価した。消泡性能は、以下の基準に従って記号化した。結果を表2に示す。
○:全く泡が見られない
△:わずかに泡が見られる
×:多く泡が見られる
Claims (2)
- (a)室温で液体の油溶性物質と(b)グリセリン不飽和脂肪酸エステル及び/又はポリグリセリン不飽和脂肪酸エステルと(c)グリセリンジアセチル酒石酸脂肪酸エステルと(d)グリセリンベヘン酸エステル及び/又はポリグリセリンベヘン酸エステルとを含有することを特徴とする豆腐用消泡剤組成物。
- (a)室温で液体の油溶性物質と(b)グリセリン不飽和脂肪酸エステル及び/又はポリグリセリン不飽和脂肪酸エステルと(c)グリセリンジアセチル酒石酸脂肪酸エステルと(d)グリセリンベヘン酸エステル及び/又はポリグリセリンベヘン酸エステルとを含有する組成物を含有する水分散液を、豆腐の製造において凝固剤を添加混合した豆乳に接触させることを特徴とする豆腐の気泡消去方法。
