Abstract
【解決手段】本発明は分散性及び沈殿安定性が優れたクルクミン含有ウコン飲料及びその製造方法に関し、更に詳しくは、水で抽出したウコンエキスと、ウコンの主要機能性物質として、水に溶解されない脂溶性物質であるクルクミンの溶解性を高め、多量に含有しても分散性及び沈殿安定性が優れたクルクミン含有ウコン飲料及びその製造方法に関する。

Description
ウコンエキス、果汁、結晶果糖、酸味剤、水溶性ビタミン及びマスキング剤を配合して均質、殺菌、製品化する段階
を含むウコン飲料の製造方法と、
飲料100mlを基準としてクルクミン含量が30〜60mgとなり、ウコンエキスを0.05〜1重量%を含むウコン飲料に関する。
きれいに洗浄した後、乾燥させたウコン850kgと水6500kgを抽出槽に投入した後、95℃で5時間加熱して抽出を行い、その抽出液を分離した。抽出液の分離後、65℃でセルラーゼで処理し、11時間多糖類を単糖類で分解させた後、反応を停止させるために95℃で40分間加熱した後、21℃まで冷却させた。この液を気孔サイズが1μmであるケイソウ土濾紙で濾過を行い不純物を除去し、65℃で可溶性固形分が40%となるまで減圧濃縮させた。濃縮液を95℃で40分間殺菌し、室温まで冷却した後、安定性強化のために同一方法で殺菌を再度行い、室温まで冷却させてウコンエキス100kgを得た。
飲料100mlの基準として30mgのクルクミン(クルクミン3472、稲畑香料(株))と安定剤であるジェランガム0.03重量%を90℃の熱水に10分間4000rpmで攪拌して溶解、分散させた。この過程が終了したら、水で抽出した可溶性固形分40%であるウコンエキス0.5重量%とりんご果汁5.0重量%、結晶果糖7.5重量%、マルトデキストリン0.5重量%、シクロデキストリン0.5重量%、クエン酸0.2重量%、クエン酸ナトリウム0.05重量%、水溶性ビタミン0.037重量%を添加して配合した。配合が終了したら、均質、殺菌工程を経て、これを缶類に詰めて100mlの飲料水を製造した。
前記実施例2と同様の製造過程を行うが、組成成分の種類及び含量のみを下記表1のように変化させて飲料を製造した。
飲料に使用される代表的な安定剤であるジェランガム、キサンタンガム、ペクチン、アラビアガム、CMC(sodium carboxy methyl cellulose)を本発明のウコン飲料に適用して各々の物性安定性を確認した。クルクミン(クルクミン3472、稲畑香料(株))と安定剤であるジェランガム0.03重量%、キサンタンガム0.03重量%、ペクチン0.05重量%、アラビアガム0.03重量%、CMC0.03重量%各々を80〜95℃の熱水に10分間4000rpmで攪拌して溶解、分散させた後、残りの添加物を入れて均質、殺菌、冷却過程を経て飲料水を製造した後、分散性及び沈殿安定性を観察した。
既存のウコンの力(ハウス食品(株))と実施例1の飲料を20〜40代の男性50人に対し、味、香り、総合的嗜好度の項目を対象に5点検査法を利用した官能検査を実施した。
Claims (5)
- 飲料100mlを基準として30〜60mgとなる量のクルクミンと、安定剤としてジェランガム0.01〜0.05重量%を80〜95℃の熱水に5〜15分間2000〜5000rpmで攪拌して溶解、分散させる段階、及び
ウコンエキス、果汁、結晶果糖、酸味剤、水溶性ビタミン及びウコンの苦味をマスキングするためのマスキング剤を配合して均質、殺菌、製品化する段階を含むことを特徴とするウコン飲料の製造方法。 - 前記ウコンエキスはウコンを熱水抽出して、セルラーゼ処理、濾過を経て減圧濃縮させることを特徴とする、請求項1記載の製造方法。
- 飲料100mlを基準としてクルクミン含量が30〜60mgとなり、ウコンエキス0.05〜1重量%とジェランガム0.01〜0.05重量%を含むことを特徴とするウコン飲料。
- 前記ウコンエキスはウコンを熱水抽出して、セルラーゼ処理、濾過を経て減圧濃縮させることを特徴とする、請求項3記載のウコン飲料。
- 前記飲料に追加的に、果汁1〜15重量%、結晶果糖5〜15重量%、水溶性ビタミン0.001〜0.1重量%、酸味剤0.1〜0.3重量%及びマスキング剤0.1〜2重量%の中から選択された少なくとも1種を含むことを特徴とする、請求項3または4記載のウコン飲料。
