Abstract
1327762 Meat product UNILEVER Ltd 27 Aug 1970 [28 Aug 1969] 42844/69 Heading A2B A shaped consolidated reformed meat product is prepared from a paste having 50-80% by wt. moisture and 1-40% by wt. fat and comprising (i) 30-97.5 by wt. of a comminuted raw meat composition in which the meat component has an average particle size of less than 2mm and contributes at least 1% by wt. of the total meat protein in the meat paste and (ii) 2.5-70% by wt. of a texturising component consisting of separated cooked meat muscle fibre bundles, each fibre being from 2-50mm in length and from 0.5-2mm in diameter. The reformed meat product has at least 70% of the fibre bundles substantially in parallel alignment with each other. The meat may be prepared from mammals or poultry. The paste may be deaerated by mixing at subatmospheric pressure. The paste may be extruded through a tapered nozzle having more than one passageway. The extrudate may be consolidated by freezing or heat setting and dried to less than 10% by wt. moisture. Substances which may be used in making the paste include coarsely ground meat, fat, water, soybean or peanut protein, polyphosphates, monosodium glutamate, carboxymethylcellulose, modified starches, vegetables, salt, flavours and colours.
