Abstract

A találmány édes- és sütőipari termékekben felhasználható tejporokatismertet, amelyeket, ha az édes- és sütőipari termékekhez azelőállítás során hozzáadnak, megnövelhetik a kenyerek, palacsinták,sütemények és piték térfogatát, és ezen túlmenően kívánatos textúrátés szájban keltett hatást kölcsönöznek a kenyereknek, palacsintáknakés süteményeknek. Az édes- és sütőipari termékekben felhasználhatótejporokat, amelyek 4-10 tömeg% nem-fehérje nitrogént (a konvertáltfehérje tömegéhez viszonyítva) és 1-20 tömeg% hamut tartalmaznak olymódon, hogy a nem-fehérje nitrogén és az összes nitrogén aránya 0,5vagy kisebb, úgy állítják elő, hogy megfelelő tejtermék-összetevőket,amelyek nem-fehérje nitrogént tartalmaznak, más tejtermék-összetevőkkel, így teljes tejporokkal, sovány tejporokkal,savóporokkal, íróporokkal, tejben levő ásványi anyagokkal,savófehérje-koncentrátumokkal és tejfehérje-koncentrátumokkal kevernekössze.
