INGREDIENTS
Australian Provisional Patent Application Number: PQ2027 PATENT REQUEST: STANDARD SPECIFICATION Invention Title: This invention is a unique microwavable freeze/thaw stable food product composed of non-allergenic ingredients specifically selected to address common food related and health allergies.
SThis product is initially in the form of a microwavable freeze/thaw stable custard tart but may also be produced in other forms such as custards, gels, sauces, cakes and puddings.
It is unique in that it avoids ingredients normally associated with products of this nature, such as dairy (lactose), animal fats (cholesterol), eggs (albumen), wheat (gluten), and yeast.
S" It is specifically designed for consumption by persons suffering from intolerance to ingredients such as lactose, gluten, albumen, preservative, artificial colourants and yeast and also for persons o desiring to follow vegetarian and/or vegan diets.
All ingredients are also free of genetically manipulated organisms.
o"oo" For example this food product would be composed thus: 1. Custard A microwavable freeze/thaw stable custard composed of any combination of 0* ingredients including soya milk, sugar, vanilla, MAPS 449 (starch), xanthan gum, turmeric, locust bean gum, thickener 1422 (a freeze thaw stable cook-up starch) food acid 331 (sodium citrate) red bean, mung bean, agar agar, or coconut in any proportions.

Pastry Crust A microwavable freeze/thaw stable pastry crust composed of any combination of ingredients including tapioca flour, white and brown rice flour, soya bean flour, maize flour, almond meal, candle nuts, pinenuts, coconut, sugar, golden syrup, xanthan gum, vanilla, water, salt, and non-dairy based soya margarine in any proportions.
3. Specifically omitted from this invention are the following ingredients normally associated with custards and baked pastry/dessert foods: Egg products, cows, goats, sheeps milk and any other animal by-products, yeast, gluten, gelatine, artificial colourants and preservatives.

The microwavable freeze-thaw stability of this product is dependent upon combinations of specific ingredients in proportions which confer the necessary stability. Exceeding these proportions will produce undesirable characteristics, such as excessive fluidity or moisture loss or undesirable firmness of custards, or brittleness or loss of coherence of pastry crusts, particularly when subjected to a freeze-thaw cycle.
These ingredients may be considered as critical to the product. Other ingredients such as natural sweeteners, flavourants and colourants are not critical, and may be varied according to taste preference of the intended market.
The critical ingredients must be incorporated in proportions which produce a desirable product.
For this reason the following claims define the essential limits within which acceptable products result. The limits of critical ingredients are as follows: A. Custard Ingredients Soy milk 40.00% 60.00% Freeze-thaw stable starch 1.00% 5.00% Locust Bean Gum 0.01% 1.00% Xanthan Gum 0.01% 1.00% B. Pastry Ingredients Gluten free plain flour and Soy flour mixture---80.00% (maximum) Polyunsaturated vegetable margarine 16.00% 30.00% Xanthan Gum 0.10% 1.00%

Claims (2)

1. A microwavable freeze-thaw stable food product typically in the form of a custard filled pastry tart in which the custard includes the following ingredients within these stated limits: Custard Ingredients Soy milk 40.00% 60.00% Freeze-thaw stable starch 1.00% 5.00% SLocust Bean Gum 0.01% 1.00% Xanthan Gum 0.01% 1.00% The said custard is contained within a pastry shell composed of the following ingredients within these stated limits: Pastry Ingredients Gluten free plain flour and Soy flour mixture---80.00% (maximum) Polyunsaturated vegetable margarine 16.00% 30.00% Xanthan Gum 0.10% 1.00%
2. A microwavable freeze-thaw stable food product composed of ingredients in proportions stated in Claim 1, said food product being free of other ingredients which are specifically excluded: these products are egg products, cows, goats, sheeps milks and any other animal by-products, yeast, gluten, gelatine, artificial flavourants and colourants, preservatives or genetically manipulated organisms.
