Claims (13)
1. Postupak za dobivanje proteinskih pripravaka iz sjemena suncokreta koji sadrži barem slijedeće korake:
- ljuštenje sjemena suncokreta dok ne preostane sadržaj zaostalih ljuski od ≤ 5 masenih %, ili osiguravanje oljuštenog sjemena suncokreta sa sadržajem zaostalih ljuski od ≤ 5 masenih %,
- djelomično uklanjanje ulja iz oljuštenih sjemenki suncokreta mehaničkim putem, pomoću prešanja, održavanjem temperature ispod 80 ° C, u kojoj se za prešanje koristi vijčana preša ili ekstruder,
- provođenje jednog ili više koraka ekstrakcije upotrebom barem jednog otapala da se dobije bezmasno, brašno koje sadrži proteine kao proteinskog pripravka, pri čemu barem jedan od koraka ekstrakcije uzrokuje daljnje uklanjanje ulja iz oljuštenog sjemena suncokreta s djelomično uklonjenim uljem,
- pri čemu se mehaničko djelomično uklanjanje ulja provodi sve dok se ne dobije sadržaj masti ili ulja u oljuštenim sjemenkama suncokreta u rasponu od 10 do 35 masenih %, pri čemu se s navedenim prešanjem sa vijkom ili ekstruderom dobiva prešani kolač u obliku peleta ili lanaca s debljinom u rasponu između 0.2 i 4 cm, te
- pri čemu se barem jedan korak ekstrakcije provodi na prešanom kolaču u obliku peleta ili lanaca.
2. Postupak prema zahtjevu 1, naznačen time da se djelomično uklanjanje ulja provodi sve dok se ne dobije sadržaj masti ili ulja u oljuštenim sjemenkama suncokreta u rasponu od 12 do 25 masenih %, poželjno u rasponu između 17 i 25 masenih %, i/ili u kojem djelomično uklanjanje ulja proizvodi prešane kolače u obliku lanaca koji imaju približno okrugli poprečni presjek s promjerom između 0.4 i 4 cm, poželjno u rasponu između 0.5 i 2 cm, ili imaju kutni poprečni presjek s duljinom ruba između 0.4 i 4 cm, poželjno u rasponu između 0.5 i 2 cm u barem jednoj dimenziji, te koji ima čvrstoću na lom od 2-10 N/mm2, poželjno 4-8 N/mm2.
3. Postupak prema zahtjevu 1 ili 2, naznačen time da se temperatura oljuštenih sjemenki suncokreta održava u rasponu između 10 °C i 80 °C, poželjno ≤70 °C, naročito poželjno ≤60 °C tijekom djelomičnog uklanjanja ulja i daljnjeg uklanjanja ulja.
4. Postupak prema bilo kojem od zahtjeva 1 do 3, naznačen time da se djelomično uklanjanje ulja i jedan ili više koraka ekstrakcije provode na takav način da stupanj denaturiranja proteina u bezmasnom brašnu koje sadrži proteine nije više od 40%, poželjno između 10% i 30%.
5. Postupak prema bilo kojem od zahtjeva 1 do 4, naznačen time da višestruki koraci ekstrakcije sadrže kombinaciju barem jednog lipofilnog koraka ekstrakcije s lipofilnim otapalom i barem jednog hidrofilnog koraka ekstrakcije s hidrofilnim otapalom.
6. Postupak prema zahtjevu 5, naznačen time da su ne proteinske tvari uklonjene iz brašna koje sadrži proteine i proteini ostaju uglavnom neotopljeni (tj. s gubitkom od najviše 10% proteina) zbog koraka hidrofilne ekstrakcije, pri čemu je kao hidrofilno otapalo korišteno vodeno-alkoholno otapalo s udjelom alkohola između 600 i 800 mililitara alkohola po litri otapala.
7. Postupak prema zahtjevu 5 ili 6, naznačen time da se provode koraci višestruke hidrofilne ekstrakcije s otapalom koje sadrži alkohol, pri čemu se sadržaj alkohola u otapalu koje sadrži alkohol povećava u barem jednom prijelazu iz jednog koraka hidrofilne ekstrakcije u drugi.
8. Postupak prema zahtjevu 7, naznačen time da je sadržaj zaostale vode 20-30% nakon prvog stupnja hidrofilne ekstrakcije i ovaj se smanjuje na 5-10% daljnjom ekstrakcijom s hidrofilnim otapalom.
9. Postupak prema bilo kojem od zahtjeva 1 do 4, naznačen time da se korak ekstrakcije provodi koristeći heksan kao otapalo.
10. Postupak prema bilo kojem od zahtjeva 1 do 4, naznačen time da se korak ekstrakcije provodi koristeći scCO2 kao otapalo.
11. Postupak prema bilo kojem od zahtjeva 1 do 10, naznačen time da se veličina zrna brašna koje sadrži protein mijenja ili je brašno odvojeno prema veličini zrna ili gustoći zrna radi izmjene funkcionalnih svojstava brašna koje sadrži protein.
12. Postupak prema zahtjevu 11, naznačen time da se veličina zrna brašna koje sadrži protein podešava na ≤ 500 µm.
13. Postupak prema bilo kojem od zahtjeva 1 do 12, naznačen time da se otapala koja ostaju u ekstrakcijskom ostatku uklanjaju primjenom vakuuma na temperaturama ispod 70 °C, poželjno kod vakuuma od 200 - 800 hPa i temperature od 40 - 65 °C.
