Abstract

In the manufacture of compressed yeast, substances known to increase the reproduction of yeast, and termed B.P. substances, are added to mashes and worts poor in such substances, in one or more stages and in quantities such that the optional concentration of B.P. substances is reached but not exceeded. The B.P. substances may be extracted from such materials as tomato juice, malt germs, fungoid mycelia, bacteria and egg yolk by water or solvents such as alcohol, carbon disulphide and ethyl ether.
