Abstract

In the manufacture of high quality beverage spirits such as cherry brandy, rum, whisky and gentian spirits, the alcoholic liquid or mash is concentrated by freezing out water and is then subjected to distillation; or unfermented liquid or mash is concentrated in the same way and then fermented and distilled. In the manufacture of whisky or other grain spirit, for example, the mash made and fermented in the usual way is treated by pressing and the separated juice concentrated by freezing and then distilled. The ice water is used to extract residual alcohol from the mash and the resulting liquid is added to the original mash. In the manufacture of cherry brandy the unfermented juice expressed from the fruit mash is concentrated by freezing and the concentrate mixed with the marc and fermented as usual. An unfermented concentrate of cherry juice or an unfermented concentrated mash is added to the fermented material before distillation.
