Abstract

1309338 Dietary beer BRAUEREI-INDUSTRIE AG FUR 4 Oct 1971 [7 Oct 1970] 46085/71 Heading C6E A process for producing a dietary beer, which has low alcohol and carbohydrate contents and a low calorific value, involves fermenting wort in a first main fermentation step only to an apparent degree of fermentation of 40-85%, boiling to reduce the alcohol content to about 1%, replacing the evaporated liquid with water or wort, cooling and filtering the resulting liquid and adding fresh yeast for a second main fermentation step, clarifying the resulting brew when the fermentation in the second main fermentation step has been initiated, completing the second main fermentation step after a solution of diastase (e.g. malt extract) enriched with marginal dextrivases and/or dextrimdecomposing enzymes of different origin have been added, storing the resulting beer and subjecting it to a final clarification. The first main fermentation step is typically carried out for 2-5 days at 4-8‹ C, the second at 12-20‹ C for 7-10 days. Half the total amount of hops used in making the beer may be added to the original wort to be boiled and the other half introduced after the end of the first fermentation step and before the boiling to remove alcohol. The worts may contain as much extract as those used in the production of strong beer. The replacement liquid may be 50-150% by volume of further wort.
