Fermenting; materials for making beverages.- To produce a beer of low alcohol-content, ordinary beer is boiled, treated with fermenting wort to restore the flavour, and carbonated. The treatment by fermenting wort is carried out at a temperature of about 48‹ F. for two or three days, and the beer is then stored at about 38‹ F., under which circumstances it is stated that lactic acid fermentation proceeds to a suitable extent without undue production of alcohol. Other fermentable liquids may be used instead of wort.
