Abstract

A concentrated beer which can be transformed directly into a drinkable form by dilution is prepared by alcoholic fermentation of an over-concentrated, preferably also overhopped, beer wort. A further concentration of the beer may be obtained by freezing out water, and, if desired a fractional distillation, the distillate up to the water fraction, or up to the water and alcohol fraction, being returned to the still. The alcohol content may be increased or reduced. The strongly brewed and over-hopped beer may be mixed after the main fermentation with a large addition of concentrated malt extract and the after fermentation allowed to take place in the storage vessel.
