Abstract

Wort with an extract content not above about 14 per cent, is fermented with yeast (Saccharomyces cerevisiac) and also with a microorganism which ferments dextrine, e.g. Schizosaccharomyces Pombe or Saccharomyces Thermantitanum, together or in stages. The wort preferably has the maltose-dextrine ratio in favour of the maltose and a low albumen content and, in this event, the yeast may be omitted, and fermentation effected with the microorganism alone.
