Abstract

Extract of malt and hops or other wort is fermented until it is free or substantially free from fermentable sugar, and the sugar-free wort so produced is concentrated by evaporation, preferably at a temperature not above 130 DEG F under reduced pressure. The concentrated wort may be blended with unconcentrated sugar-free wort to produce a beer having a better flavour or palate, or it may be supplied alone to be diluted by the addition of water before use. Saccharine, xylose or other non-fermenting sweetening agent may be added to replace the sugar removed. A preservative such as potassium meta-sulphite may also be added.
