Abstract

The fermenting power of yeasts is increased by adding to the yeast, cholesterine, cholesterine compounds, and substances similar to cholesterine such as phytosterine, paracholesterine, ergosterine or any other sterine. The process may be applied to pressed yeast, brewer's yeast, yeast for fermented fruit juices or for making bread. The cholesterine is added in an extremely fine state of subdivision, preferably as an emulsion or colloidal solution in a suitable fat. Phosphates or perphosphates may also be added. The yeast may be first kept for some time in dilute malt extracts and then purified in known manner with charcoal.
