Abstract
280,861. Claassen, H. Nov. 19, 1926, [Convention date]. Yeast.-In the manufacture of baking yeast from molasses by the aeration process, a mother yeast is grown in a solution prepared from malt and malt sprouts containing only organic nitrogen. From that mother yeast two or more cultures in molasses are prepared with increasing additions of inorganic nitrogen nutriments, the yeasts having a successively increasing albumen proportion. The last culture contains about 60 per cent albumen and is used as store yeast without being compressed. The store yeast in a semiliquid state is then fermented in a molasses solution with or without other organic nitrogen nutriment to produce baking yeast which is separated and pressed.
