Yeast.-Durable yeast is obtained by keeping yeast of any kind in motion during six to twelve hours in weak solutions of alcohol, e.g. 0.25-1 per cent by volume, to deprive the yeast of its content of albumen, and drying. The yeast may be retained and moved in its own wort or in alcohol-containing wort from other fermentation processes.
