Abstract

In the production of yeast by the fineaeration process in which the air is introduced through porous diaphragms or the like, the yield and quality of the yeast are improved by adding to the fermenting liquid a small quantity of an organic acid such as lactic or acetic acid, such additions having the effect of lowering the surface tension. For example, lactic acid may be added to a molasses wort either as such, or by means of a special lactic acid fermentation of a portion of the material.
