Abstract

Pressed yeast is obtained from molasses by a modification of the aeration process in that the propagation is carried out in several stages using in all, or at least some of said stages a mixture of molasses and a de-yeasted or de-alcoholized wort as propagating medium. In an example pitching yeast is obtained in a four stage process in which 200, 800, 3,500 and 6,000 kgs. of fresh molasses are successively utilized, at each of these stages de-yeasted wort or thin or thick residual liquid is added. The pitching yeast may then be utilized in 16 commercial yeast fermentations in each of which 2,000 kgs of molasses and 130-150 hectolitres of de-yeasted wort is utilized. The de-yeasted wort should be heated to 85 DEG C before use. Generally the yeast shows no sign of exhaustion but should this occur then an intermediate fermentation making use of molasses alone should be effected.
