Abstract

In the production of acidified malt in accordance with Specification 339,047, [Class 14 (ii)], the germinated cereal is steeped in a lactic acid solution prepared by the proliferation of lactic acid bacteria in a mash of malt and barley or the like, and the residual liquid which does not pass into the germinated cereal is made up in a separate vessel to its original volume by the addition of a further quantity of lactic acid solution similarly prepared and, after being left to allow formation of additional lactic acid, is employed in steeping a fresh batch of germinated cereal. After about ten steepings the liquid begins to deteriorate and is thereupon rejected.
