Abstract

For accelerating the fermentation of dough the mixed dough comprising flour, water, and yeast, with or without other ingredients, is fermented under substantial super-atmospheric pressure in an airtight sealed container before dividing the dough. The pressure may be developed by the fermentation of the dough itself and this pressure may be augmented by the introduction of an extraneous pressure. The process may be applied to both the "sponge" and the "straight dough" processes of making dough.
