Abstract

Pressed yeast is preserved by incorporating permanently thereinto a small amount of a dilute aqueous alcohol having no harmful effect on the yeast but having an inhibiting action on infecting organisms such as moulds and bacteria. The treating liquid may be a dilute aqueous solution of ethyl, propyl, isopropyl, butyl, or amyl alcohol or a mixture of any of these, and such an aqueous solution may be used in place of water in the usual process of bringing the yeast to normal consistency, or by soaking the pressed yeast in the solution for a short time, or by treating the yeast cream therewith before pressing. The selected alcohol may be used in admixture with one or more denaturants which are not harmful to the yeast, for example, acetic acid. Examples are given, in one of which a mixture of ethyl and butyl alcohol is incorporated in the yeast. Specification 308,471, [Class 14 (ii)], is referred to.
