Abstract

Tanning-containing wood, also containing penicillium spores, is treated to improve it for use in the ageing of spirituous liquor by mixing a quantity of said wood in comminuted untoasted condition, with or without a quantity of the said wood in comminuted toasted condition, with comminuted acorn kernel and maintaining the mixture moist until a prolific cryptogamic growth rich in aminosuccinamide has developed and the tannase produced has at least substantially completely dissociated the tannin present in the wood, thereafter adding a quantity of said wood in comminuted condition in which a substantial proportion of the fungi present other than penicillium have been destroyed, and maintaining the mixture moist until a prolific penicillic growth has developed. This mixture is added to whiskey at the rate of one part to 16 parts of whiskey, or one part is added to 32 parts of fortified wine. The wood may be the Bourbon variety of the white oak or glycyrrhiza. The moistening solution is preferably 1 : 150 magnesium chloride solution and the acorns are used either fresh or after having been preserved in ethyl alcohol or isopropyl alcohol.
