Whiskey, which is most widely enjoyed as a Western alcoholic drink, is produced from unblended whiskey made by saccharifying and fermenting germinated grains and water and distilling a seta alcohol-containing substance. Alcoholic beverages that use spirits, shochu, flavorings, pigments, etc., and are said to include those whose flavor, color, etc. are similar to whisky.

Furthermore, it is generally known that the taste of fermented liquor immediately after distillation becomes mellow only when it is stored and aged for several months to several years. Therefore, it is common practice for whiskey to be aged in barrels made from oak heartwood.

(Problems to be Solved by the Invention) On the other hand, in recent years, shochu, which is inexpensive, has no taste, and can be easily flavored to one's liking, has become popular, and how to enjoy shochu has become a major issue. In light of this trend, the present inventor created a barrel from oak sapwood and poured shochu into the barrel in order to transform cheap shochu into an expensive alcoholic beverage similar to whiskey. Much of the material dissolves into the shochu from the sapwood,
This creates gaps in the barrel, making it difficult to store shochu, and shochu not only easily turns amber and has a color similar to that of whisky, but also has a taste and aroma very similar to whisky. The present invention was achieved by discovering the following.

(Means for Solving the Problems) The above aspects of the present invention have been achieved by a method for producing an oak-denatured alcoholic beverage, which is characterized in that oak wood is added to ethanol or an aqueous solution containing mainly ethanol.

In the present invention, although high-quality alcoholic beverages such as whiskey and brandy are not excluded from the "aqueous solution containing ethanol," alcoholic beverages that originally lack a distinctive taste are denatured into alcoholic beverages similar to whisky. For this purpose, it is preferable to use a simple ethanol aqueous solution or inexpensive shochu, etc. Especially when using shochu produced by fermenting and distilling grains, it is preferable because it is similar to -N whisky.

The oak used in the present invention is another name for menpenin, and it is also produced in highlands such as Thailand, Vietnam, the Philippines, Malaya, Sarawak, Brunei, Sabah, Indonesia, and New Guinea. It is imported from Africa. The same pressure is applied to oak and erectus erectus in our country, and oak wood in the present specification also includes these oaks and erectus erectus.

In the present invention, it is particularly preferable to use sapwood among these oak woods. This is because when oak wood is poured into alcohol or an alcohol-containing aqueous solution (hereinafter referred to as alcohol, etc.), a substance that dissolves into the solution, turns the solution amber, and adds a taste and aroma similar to that of whisky, becomes the heartwood. This is because it is contained in large amounts in the sapwood.

In just a few days, it is possible to obtain an alcoholic beverage that closely resembles whiskey in color, taste, and aroma. While adding the sapwood, it is preferable to keep the temperature below room temperature from the viewpoint of taste and texture, and from the viewpoint of preserving the aroma as much as possible.

Oak wood is usually washed with water and then dried before being put into alcohol or the like. The drying conditions can be selected depending on the material, shape and size of the oak wood, etc.
It is preferable that the moisture content in the oak wood is about 15% to 20% by weight at ℃ to 80℃, insecticidal in the above drying temperature range,
Can be sterilized. Also, the moisture content is 15% to 20% by weight.
By setting the percentage by weight, it is possible to prevent mold and the like from growing during storage of oak wood. Too drying is not preferable because the amount of alcohol etc. absorbed becomes too large.

In the present invention, as opposed to putting alcohol etc. in a barrel, the method is to put oak wood into alcohol etc., so not only is there no need to manufacture barrels, but also furniture can be used. It is also possible to effectively utilize sapwood that is difficult to use for other purposes.

(Effects of the Invention) According to the present invention, inexpensive alcohol or shochu can be extremely easily denatured into an alcoholic beverage similar to whisky. or,
Not only is no special equipment required for denaturation, but the period required for denaturation is extremely short, making it convenient for individuals to denature according to their own preferences.

Example 1 After sawing white oak sapwood into 2.4 cm square pieces,
It was processed into a 2.2 cm square with a plane, cut into a length of 16 cm, and then washed with water and dried at 70° C. until the water content in the sapwood was about 20% by weight. The 10 white oak sapwood pieces obtained in this way were placed in 1.81 g of shochu for fruit liquor with an alcohol content of 35%, which was placed in a wide-mouthed glass pin of about 51 pieces, and the mixture was sealed at about 20°C. I left it for 5 days.

Example 2 A modified shochu was produced in the same manner as in Example 1, except that white oak sapwood was added for one month. When the obtained modified shochu was diluted by about 2.5 times with the shochu before modification, it became extremely similar to whisky, similar to the result of Example 1.
