Abstract

In a process of obtaining yeast and alcohol from mashes containing sugar wherein the nutrient and air are added in individual phases depending upon the yeast growth, the period of working is divided up into short time intervals, for example, of from fifteen minutes to three hours, and amounts of air and molasses are supplied in each interval which are substantially the same as the quantity which would have to be supplied over that interval to secure strict accordance with the exponential growth curve, the air supply being limited to not more than ten times the quantity of mash to be fermented, and the aeration being effected with air in finely divided form. An example is given, the calculation of the amounts of molasses and of air supplied in each interval being explained in detail.
