Abstract
Yeast is destroyed in order to liberate the vitamins by disintegrators, colloid mills, gear pumps, spark discharges or by radiation with short-waved light such as Röntgen rays.ALSO:Vitamin-containing beverages, particularly beer, are made by adding to the wort during the main fermentation or to the fermented beverage during the secondary fermentation, more vitamins in the form of destroyed opened yeast than the living yeast can absorb. Yeast is cultivated separately and destroyed and the fitered or unfiltered yeast cell sap is added to the wort before the conclusion of the fermentation or added to the finished beverage during the secondary fermentation, or the fermented beverage is removed from the yeast used, the latter is destroyed and the yeast cell sap obtained is admixed with the fermented beverage during the secondary fermentation. The yeast may be destroyed by disintegrators, colloid mills, gear pumps, spark discharges, or by radiation with short-waved light such as Röntgen rays. It is found that beer treated in this way conditions more rapidly than ordinary beer and the colour is better. Specification 367,909 is referred to.
