Abstract

Before fermentations according to Specification 420,878, in which the cellular saturation of the yeast is maintained at a value not exceeding 10 kilograms of yeast to 1000 litres of liquid, the liquid is brought to a higher temperature and maintained thereat for at least ten minutes before fermenting. It may also be acidified before heating.
