Abstract

Beer is purified by treatment with enzymes occurring in mould fungi, or extracts thereof, followed by germ filtration. Suitable enzymes are those of the Aspergillus, Penicillium or Mucor genera, for example, Aspergillus Oryzae. The enzyme treatment may be carried out in the storage cask at normal cellar temperature during a period of several days.
