Abstract

294,209. Boutteaux, M. J. J. July 20, 1927, [Cnnvention date]. Vinegar; yeast. - Vinegar is obtained by the oxidation of the wort which is separated from the beer yeast discharged from the fermenting vats. The wort may be sterilized and alcohol, obtained by the distillation of a part of the wort itself, is optionally added. The Specification as open to inspection under Sect. 91 (3) (a) also states that the yeast strained off is washed, bleached with ammonium carbonate, and decanted to remove the sound cells, which are then dried. This subject-matter does not appear in the Specification as accepted.
