Abstract
195,963. Pollak, A. April 4, 1922, [Convention date]. Yeast.-To wort in which yeast has been cultivated until reproduction has nearly ceased is added a further supply of yeast which has been subjected to treatment which increases the permeability of the cell-membrane, in order to increase its power to assimilate nitrogen and to utilize the worts more thoroughly. The treatment is effected bv the aid of enzymes which decompose semicellulose. Such enzymes are afforded by germinated cereals and leguminous seeds, the stomachs of ruminants, pancreatic secretions, " mortified yeasts," or the production or autolysis of yeast, or of fungi of the genera Aspergillus and Mucor. The yeast which has been treated with these enzymes may, before being added to the wort. bo cultivated in a medium containing such fermentation and autolytic products, or distillers' wash or spent liquid from the manufacture of yeast. The Specification as open to inspection under Sect. 91 (3) (a) states that similar results can be obtained by increasing the acidity or alkalinity of the mash. This subject-matter does not appear in the Specification as accepted.
