[Class 135.] A valve b in a pipe circuit between steam-heated pans and a steam trap is fitted with a spring b<2> and with a stem c and handle c<3> for manual operation. When steam is turned on and the pressure reaches the desired degree, the valve is raised by the spring and the steam passes to atmosphere at the outlet a<7> instead of to the trap. The handle c<3> allows of an immediate relief of the pressure by hand in case of over-heating. The device is intended specially for use with pans for boiling sweetmeats.
