Emulsions, making. - In apparatus for making emulsions comprising fat, dried milk and water, the ingredients are first mixed in a preliminary mixer 13 having rotating beaters and are subsequently emulsified in a high-speed machine 12 such as a centrifugal machine. The mixer 13 is driven continuously from an electric motor 1 through belts 3, 14<x>, passing round a double pulley 6, 7, loose on the shaft 5 of the machine 12. To drive the machine 12 in addition to the mixer 13 the belt 3 is shifted, by a hand-screw operated fork 16, on to a pulley 4, fast on the shaft 5 and connected with the pulleys 6, 7 by a clutch such as a roller-ratchet clutch. A pump 11 is driven through a belt 9 from the shaft 5.
