Abstract
Produits comestibles déshydratés et leur procédé de fabrication On obtient des produits comestibles déshydratés facilement réhydratables en séchant des compositions comprenant une matière alimentaire finement divisée dispersée dans un gel comestible sensiblement exempt d'aération et ayant une résistance de gel correspondant à une contrainte au seuil d'écoulement de 200 grammes d'un cylindre de gel ayant 12 mm de diamètre et 12 mm de hauteur comprimé à 5 cm/min. entre deux plaques de pression; les gels sont produits par exemple en mélangeant rapidement des particules solides de sulfate de calcium dans des sols aqueux gélifiables d'alginate ou de pectate d'une faible teneur en groupes méthoxy et en permettant ensuite au sulfate de calcium solide de se dissoudre et aux mélanges de se gélifier dans des conditions exemptes de contrainte. Application à l'industrie alimentaire.
