Powdered food prodts. with gelling or thickening props. contain a mixture obtd. from simultaneous dehydration of a gelling agent (pectin, alginate, carrageenate or gelatin) with a pulp, soln. or puree of a food prod. The food prod. is fruit, vegetables, eggs, meat, drinks or milk prods. This solid prod. is easier to use than liquid setting agents and has longer storage life.
