Abstract
Procédés pour la préparation de gels aqueux d'alginate ou de pectate et produits ainsi obtenus. On produit des gels comestibles d'alginate et de pectate d'une faible teneur en groupes méthoxy en mélangeant rapidement des bouillies aqueuses contenant une matière alimentaire finement divisée et des particules d'une matière solide faiblement soluble, par exemple de sulfate de calcium, capable de libérer un agent gélifiant en solution, dans des sols aqueux gélifiables d'alginate ou de pectate d'une faible teneur en groupes méthoxy et en laissant ensuite la matière solide, dans des conditions exemptes de cisaillement, libérer l'agent gélifiant, par exemple ions de calcium, de matière que le mélange puisse se gélifier. Application à l'industrie alimentaire.
